e-Sensing Technology in the Philippines

Science works again as DOST-ITDI (Department of Science and Technology – Industrial Technology Development Institute) developed e-Nose and e-Tongue technology which can mimic the human senses. Electronic sensing will be of great help to food industry. Thru this, food will easily classify, describe and control. At present, the quality and safety of foods is being studied. The flavor, maturity and stability of food products like virgin coconut oil, vinegar, soy sauce and coffee are being checked by the technology to check its quality and safety. Food manufacturers cannot rely primarily on the human senses since humans are prone to health issues, fatigue and environmental factors they may affect their sensory perceptions. Cross selective sensors of the machine can detect and measure food molecules. The e-nose can sense the most volatile components of food while the e-tongue can taste dissolved compounds of food.

A statistics software will then interpret the results given by the sensors. Such softwares include Principal Component Analysis (PCA), Discriminant Function Analysis (DFA), Partial Least Squares (PLS), Soft Independent Modeling of Class Analogy (SIMCA), and Statistical Process/Quality Control (SQC).
